Harvest Veggie Fritters

You can make this with whatever veggies are coming out of the garden or at the market. It is a great way to use those large zucchinis you can’t seem to get rid of if you’ve run out of zucchini costumes and light fixtures.

•    Zucchini grated 2 cups
•    1 Carrot grated
•    1/2  Onion chopped
•    1 Potato grated
•    Any herbs you like
•    One egg lightly beat
•    1/4 cup garbonzo bean flour
•    salt & pepper to taste

Stir all the veggies together, you may need to squeeze out some excess juice. Add the herbs, egg and flour. Combine all ingredients. Add a bit of olive oil to a pan drop patties of veggie mixture into hot pan. Turn when brown on each side. Serve with raw cream, creme fraiche or sour cream or just by themselves.
