Grilled Radicchio

Radicchio raw is bitter. Radicchio grilled will make your heart sing. And it is super easy and fast.

Preparation:
Cut the radicchio into wedges, perhaps quarters. Drizzle and brush olive oil over the radicchio. Salt and pepper each side. Grill on medium heat for about 5-10 minutes per side till the radicchio has browned and shriveled in size.

Hint: Slice grilled radicchio wedges and eat on toast with pesto or parmesan cheese
